Country Biscuit Carrot Cake

| ½ cup | granulated sugar |
| 2 tsp | vanilla |
| 2 tsp | ground cinnamon |
| ½ cup | orange juice |
| ½ cup | shredded carrots |
| 1 pkg | Southeastern Mills® Country Biscuit Mix |
| ½ cup | chopped walnuts |
| ½ cup | cream cheese, softened |
| 1½ cups | confectioners’ sugar |
| 1 Tbsp | milk |
| 1 tsp | vanilla |
Preheat oven 350°F. Evenly coat an 8 x 8 light-colored baking pan with non-stick cooking spray.
In a medium mixing bowl, whisk to combine egg, sugar and vanilla.
Add cinnamon, orange juice, carrots, Country Biscuit Mix and walnuts; gently stir batter.
Spread batter into prepared pan.
Bake until done, approximately 20-25 minutes.
With an electric mixer, beat cream cheese, confectioners’ sugar, vanilla and milk, about 2-3 minutes.
To adjust the consistency of the frosting, additional confectioners’ sugar will thicken the frosting and additional milk will make a thinner frosting.
Frost cake when cooled.
